Fresh Produce From The Garden

I just came in from the garden and sat down to have a glass of sweet tea and rest for a while. It has been a busy time here on the farm. We have the garden planted and the food is starting to pour in. We start several plants for the garden in the green house. This year we started our tomatoes, cucumbers, squash, zucchini, bell peppers, jalapeno peppers, water melon, cantaloupe, and eggplant.

We are having onions, cucumbers, squash, new potatoes, and zucchini. We have already made our sweet pickle relish which we use in macaroni salad and potato salad for our family dinners at the farm. The beets have already been pickled to have with our pinto beans this winter.

My husband and I were in the garden yesterday and I looked in the bean vines and we have green beans already on the vines. When the garden starts producing it is always surprising what you will find every day when you go out to gather the fresh vegetables. Sometimes it is like the vegetables just grow overnight.   Squash and zucchini are really vegetables that grow very fast. One day you look at them and think that one needs another day and the next day it is almost too big. We made squash casseroles yesterday to put in the freezer to have when its winter time again.

I hope everyone who has a garden is starting to enjoy a bountiful harvest this season.   We can’t wait to eat and can all the wonderful things that Mother Nature and hard work has provided for us.

My husband just came into the house and told me that we will be picking blueberries this week!!!!! Picking blueberries is one of our favorite things to do on the farm. We will be at the local farmers market selling them.   Come and get your blueberries.
